The Selector System consists of a vertical cylindrical tank, divided into two superimposed and communicating compartments through a large diameter pneumatic central valve with programmed opening. Maceration takes place in the lower tank, the upper tank, which has a volume of 10-15% of the lower tank, allows the accumulation of the must during reassembly.
